Easy Vegan Pancakes & Waffles

Ingredients:

  • 2 1/2 cups flour (or 2 cups flour and 1/2 cup ground flax seeds)
  • 2 tablespoon sugar
  • 2 tablespoon baking powder
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon salt
  • 2 1/2 cups soymilk or water
  • dash of lemon juice
Directions:

Combine dry ingredients and then lightly mix in the wet ingredients. Leave 5-10 to rise. Gently fold down and leave again for 5-10 minutes if you have the time. Gently fold down one last time before cooking.

It's important only to mix the batter enough to moisten - do NOT over mix since doing so will make the pancakes/waffles tough and thick. It's okay for there to be some little bits of dry flour in it.

Waffles store well in the freezer - simply reheat in your toaster!

Easy Vegan French Toast

Ingredients:

  • 1/2 cup soy milk
  • 2 tablespoons oil
  • seasoning: 1 pinch of salt, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon vanilla extract, 3 teaspoons sugar
  • 1 tablespoon flour
  • 2 tablespoons cornstarch
  • 4 slices of bread
  • maple syrup
  • powdered sugar (optional)
Directions:

Whisk all ingredients together except for syrup, powdered sugar, and bread. Take individual slices of bread and dip them into the mixture before laying them onto a well greased pan over medium/low heat. After a couple minutes flip bread slices over to brown the other side. Both sides should be golden brown when done.

Sprinkle some powdered sugar on top and dip into syrup. Yum!

Easy Vegan Sausage Gravy

Ingredients:

  • 1 package vegan sausage (soy sausage crumbles, patties, etc)
  • 1/4 cup flour (whole wheat pastry flour works well, but any kind will do)
  • 4 cups plain soy milk
  • Salt & Pepper to taste (you'll be adding lots of each)
  • 1/2 medium onion, finely chopped
  • Up to 1/2 cup vegetable oil
Directions:

Saute chopped onions and sausage (break into little pieces or use prepackaged crumbles) in a large, hot frying pan. When cooked, place the onion/sausage mixture into a bowl and set aside.

In the same frying pan, reduce heat to medium and prepare a roux by mixing about 2-3 tablespoons flour with enough vegetable oil to make a heavy paste (about 1-2 tablespoons of oil). Stir the roux for a couple of minutes over medium heat, then slowly add about a cup of soy milk to the mixture, stirring continuously to avoid lumps.

Continue to add more soy milk, oil, and flour as the gravy simmers. If you add too much milk just add a little bit more flour. Keep in mind the longer you cook the gravy, the more it will reduce and thicken.

Add as much salt & pepper as you like. Add the onion/sausage mixture to the gravy and continue to stir and simmer until the gravy reaches the taste and consistency that you want.

This goes great with the vegan biscuits recipe.

Easy Vegan Biscuits

Ingredients:

  • 2 cups flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/4 cup margarine or vegetable shortening
  • 3/4 - 1 cup sour soy milk (soy milk + 1 tsp vinegar)
Directions:

Preheat oven to 450 F. In a large bowl, sift together the dry ingredients. Add the margarine and sour milk and gently mix together until "just mixed." Spoon into lightly oiled muffin tins, or roll out and cut with biscuit or cookie cutters and place on a lightly oiled cookie sheet. Bake for 12 - 18 minutes. Makes 6 biscuits.
