Easy Vegan Banana Bread

Ingredients:

  • 6 or 7 very ripe bananas
  • 1 1/8 cups maple syrup
  • 1/3 cup canola oil
  • 2 teaspoons pure vanilla extract
  • 3 cups whole-wheat pastry flour
  • 2 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups chopped walnuts or pecans (optional)
Directions:
Mix & mash the bananas, maple syrup, canola oil, and vanilla extract.

Sift together the pastry flour, baking soda, and salt. If you’re adding nuts, mix them in.

Blend the two mixtures and divide into 2 small lightly oiled loaf pans. Bake at 350 F for 40 minutes, or until center is set.

Easy Vegan Corn Bread

Ingredients:

  • 1 cup cornmeal
  • 1 cup flour
  • 5 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup sugar
  • 1 15oz can creamed corn (or 1 1/4 cup water)
  • 2 tbl canola oil
Directions:

Combine ingredients. Mix in the can of creamed corn and the canola oil. Bake for 25 minutes at 350 F.

This makes yummy, crumbly corn bread.
